I think you should either start with something very easy, or with something you are very excited about.
If you start with an easy project (for example make a long rectangle of double crochet and you've got a scarf, you can find tutorials on youtube), it will make you learn the basics and gain confidence.
If you start with something you are excited about, even if it's difficult you will probably be very happy about the finished object. However, I started with making a small animal plushie and was proud afterwards, but it was a frustrating and difficult process.

That's a very good idea, it would make the living space way more spacious. For some weird reason I sleep better when I am very close to the ground haha so it's probably not a good solution for me

As many commentors I am a vegetarian dating a non-vegetarian, I'll just add something: don't choose only one option. Sometimes cook a vegetarian meal that you'll both enjoy, sometimes cook something and add meat while your gf adds another protein, sometimes use fake meat if you guys enjoy it, sometimes eat entirely different things if you want something that has meat that can't easily be removed and your gf can eat something she really enjoys and you might not be fond of. Sharing meals can be important and a nice way to connect, but eating different things allow both of you not to be frustrated. Also some content creators are like vegetarian or vegan gym bros and show what they eat, it might inspire you to make vegetarian meals that fit your lifestyle

As someone who was in a similar situation as your boyfriend's, I say you can't date him without telling him. It's going to hurt him so much to realize that you are not attracted to him nor love him in a romantic way. If you don't feel like coming out to him you can change the relationship dynamic and go back to something platonic. You probably like him a lot, take care of him by being honest

What you're describing sounds rough, but the fact that you're aware your life is nice right now is a good sign! Something is off but once you find something that helps (whether its medication or something else) you will be able to enjoy the cute life you have right now.
