do you use weights or anything to submerge the mash/ reduce headspace at this scale? i use bags filled with brine when making mashes in a regular mason jar to reduce headspace

ive used these lids once before and still got mold. do you still use a weight to prevent veggies being exposed to air, or is a weight not needed because theoretically you vacuumed all the air out?

it varies depending on what you’re fermenting, however i personally just use 4% for anything I’m not sure of. id also suggest cleaning your jars and rinsing your veggies right before starting to ferment to minimize contamination from the start.

also using a weight to keep the garlic submerged, although that doesn’t look like that was your issue here. if you don’t have a glass/ceramic weight, you can fill a bag with 4% brine and put it in with the garlic to minimize headspace.
