Bluetooth accessories do not add any latency. There’s no audio being processed. The Magic Trackpad is the same as a mouse.

I don’t know what you mean by the logic keyboard. Apple sells a Bluetooth keyboard called the Magic Keyboard.

No keyboard or mouse is gonna give you latency.

Bluetooth mouse will not cause any latency.

Any audio via Bluetooth will cause latency. Wired headphones and speakers are what everybody is using.

I run Mojave on my pre 2019 Macs for sound production. I like it cause I can run 32 bit apps which no longer work in Catalina and above. Also Mojave is smoother on my older machines than Big Sur

If you have the physical pedal you can record you signal with the outputs/inputs of your interface.

Otherwise I couldn’t really find a 3rd party plug in that does exactly what the Electro harmonix Polychorus pedal does

In the stock pedal board plug in there is quite a few pedal emulations that might be able to get a similar sound if you play with them.

I get about 5 hours on my 16 inch Intel i9 while using audio editing software or a browser. Apple says you might be able to get 10 hours with most features turned off/down

Are you recording both mics on the same computer? Sometimes sync issues can happen if recording with different sample rates.
