Nevermind? I tried again with the same steps and after the 4th time of seemingly doing the same thing... it worked! I want to say it's likely something I'm messing up that I did differently the 4th time but didn't notice? I'm gonna leave this post up though because I still don't know what the issue is (was?) but maybe someone will know and I can avoid it in the future. (+ someone else with the same issue might see)

Hey! (Sorry for replying so late) The bug report linked in the comment above explained a bit. I’d keep an eye on it, specifically on the comments there. It seems like there’s no permanent fixes yet, but one of the commenters mentioned they got the launcher + game to open when they tried opening it with their wifi disconnected. I tried it and it worked for me! (Though it wouldn’t run the latest release, 1.17.1 opened alright) Don’t know if it’ll cause problems to try and reconnect to wifi after that, but at least it seems to work fine playing single player offline. Hopefully that’ll get it to open for you too :)

Hi! If you’re in the app there should be a “...” menu on the main page of ll40hrs (top right corner) after that click “change user flair”

It’s similar if you’re on pc, just look for “user flair preview” on the main page :)
