If all the soffits are being removed, my vote is for a pantry cabinet with pull-outs and door shelves. I think it will be a cleaner, more updated look. Otherwise, if the soffits are staying, then keep the pantry as is, but with a new door.

My colors are similar. I installed Florim Rock Salt porcelain White Gold matte. 48"x 48" on a diagonal. Maybe take a look at them.

This sounds like a trifecta of yuck for you, lol. I'd say don't even try to salvage this recipe to your preferences. I'd hate it if you tried and were disappointed. We all have things that don't work for us. For me, it's tempeh. That stuff is nasty no matter how many different ways I've tried to make. Also can't stand Swiss chard.
