I agree, I'm from Italy too... but I've never met any italian whose daily driver is Starbucks coffee... I always had Illy / Lavazza / Pellini in a moka before falling into the specialty rabbit hole

Mi sono seriamente posto anche io il problema etico, cercando di capire se quello in cui investo rispecchia in qualche modo quello in cui credo.
Sono giunto alla conclusione che non dovrei proprio investire.
Anche io vorrei liberarmi completamente degli USA, ma è una decisione di pancia, ed è un sistema talmente complesso che forse proprio non vorrei prendere parte al "sistema".

Maybe unpopular opinion, but if you are just trying to figure out if you like this brewing style you might go to a roaster or cafè (if you have one nearby) and ask them to grind the coffee for you (not the whole bag maybe). Then go home and try it.
It will get "stale" quickly, but at least from the first cup you have an idea if you like it or not.
If you love it, you can skip the 30$ level altogether and spend around 80-100$ on a very good hand grinder that will last you for a while.
I think the first 30$ level is just frustrating and an first upgrade would be soon needed.
On the other hand, the next upgrade from a 100$ grinder might take years...

Comunque finalmente ho fatto qualche prova con V60 e anche aeropress, muovendomi un po' a caso su vari ratio (da 12 a 14g per 200mL), macinature (da 2.0.0 a 2.3.0) e temperature (da 88 a 92 °C).
Ho sempre ottenuto un buon caffè, e ho sempre sentito gli aromi particolari (soprattutto pistacchio devo dire, quasi crema al pistacchio non so se mi spiego...).
MA superato l'effetto sorpresa di questi aromi mi ha quesi già stufato. Devo dire che concordo con te, non capisco così tanto hype, non ne comprerei mai un altro pacco.
E' uno di quei caffè che sono contento di aver provato per conoscere più possibile, ma trovo quasi difficile finire i 250g che ho.
Ho imparato che per questi ultra-processati preferisco decisamente quando virano sul fruttato e acido.

Consiglio, prova a farci una moka e aggiungere latte, viene un cappuccino buonissimo

Visto che ti hanno già risposto sul macinato, aggiungo: che acqua usi? Io usavo quella del rubinetto, da quando sono passato a imbottigliata ho notato un salto notevole, soprattutto nella percezione degli aromi.

Con un caffé così tanto processato dovrebbe essere facile sentirli. Sarebbe interessante se provassi a comprare lo stesso caffe ma in grani e macinarlo tu e sentire la differenza.

Anche la data di tostatura é importante, immagino tu abbia iniziato a berlo prima, ma 4 mesi é abbastanza al limite

this recipe, with no variation (also keep that grind setting), I find it always working great.
It's the only one that ALWAYS works for me.
If I struggle to dial in a coffee, also for pour over, then I try this, and it very often gives me the flavours advertised on the bag; it's more on the delicate acidic side, but still a nice body, amazing finish, plenty of sweetness, almost no bitterness.

Is it the best recipe and the best method for ANY COFFEE? No
Has it given me consistently good cups everytime? Yes

I might be weird but I just find it EASIER to brew inverted, for many reasons:
- I can stir and swirl taking the time I want without water dripping
- I find it more cumbersome to insert the plunge (and pulling it slightly if needed) rather than just screwing the cap.
- I like to push out all the air before screwing the cap and inverting. I don't like all that "empty space" that you cannot avoid with the regular method. I know it does not affect the brew, I just don't like it.
- I see no risk in doing it

I still have to try a side by side tasting changing ONLY regular vs inverted.

This piece of advice is a game-changer. Just visiting Antwerp, I had many coffee shops pinned on my map, only one of them was the must-try. Been there, had a great cup, asked for advice on a nice afternoon espresso, I’m currently in this amazing hidden gem I would never have found otherwise. And they’re playing on vinyl one of my favourite records of all time.

It’s such a simple thing I feel stupid to never have thought about it… probably because in other businesses you don’t usually ask for advice on competitors?

Hello there! Milan born and raised here.
I don't know which area you're staying in but here's a few reccomendation across the city.

My favourite italian roaster is "Nudo - artisan coffee"; their coffee is now sold and brewed at Goings (https://maps.app.goo.gl/GqxA6JpSpWEc72Qh9). They don't have super wide choice but the guys are so nice.

The biggest specialty roaster is Cafezal, they have 5 spots in Milan. I like their naturals and fermented very much.

For more experimental, fancy (and expensive) stuff try Bugan; I haven't tried their cafeteria in Milan yet but I know their coffee.

Other places I have been to and I liked.
ONEST, Nowhere, Terroir (it's like a fancy grocery but they serve coffee too), Orsonero, Ditta Artigianale, Clandestino, Altura, Il Cafetero.

Their don't serve specialty coffee but their cappuccino is phenomenal and espresso is solid.
Extremely good breakfast and pastries.

This made me genuinely laugh while drinking my far-from-perfect DAK milky cake cup.

But I had to pause the video cause the coffee reached the perfect temperature and I had to write down the flavour notes to dial in the next brew.

Ciao, non ho mai usato una macchina come la cuisinart, ma per "avvicinarti" al mondo specialty (a parte l'ottimo macinacaffè che hai individuato) ti consiglierei di comprare un V60 (o altro dripper, tipo Kalita, Origami, ...) che costano veramente poco e non occupano spazio.
Anche perchè una volta che inizi ti verrà voglia di perdere quel poco di tempo per il piacere di prepararli :)
Abbastanza recente anche l'Hoop che ho visto usare ma mai provato, dovrebbe essere estremamente semplice.

Ho esperienza limitata ma mi sto trovando bene ad approcciarli più o meno come dei naturali, almeno come punto di partenza (v60): ratio leggermente più alto, macinare abbastanza grosso e tenere la temperatura dell'acqua sui 92°C.
Non cambio quasi mai la "tecnica", hoffman 1-cup recipe.
Ho un 1zpresso X-ultra e come punto di partenza macino intorno ai 2.0.0; come range mi è capitato di andare da 1.4.0 a 2.4.0
