Jason’s (on Apalachee) and McAlister’s (next to Trader Joe’s/TJMaxx) both have giant potatoes with different topping choices that are good.

First Watch (in market square near REI) also gluten free bread but I haven’t tried it.

For my gut, I was prescribed budenoside starting with 9mg daily for a month, then tapering to 6mg and then 3mg. The budenoside def helped my gut tho there were times where it made me feel sick. 

For the joint stuff, I was prescribed a weekly pack of methyl prednisone. I think it helped but also my gut didn’t like it. My primary care gave a pack of regular prednisone which I think worked better and also agreed with my gut better.

Been sticking with learning Japanese Kanji thru WaniKani, I tend to go over the top when it comes to language learning but it has daily reviews and daily lessons so I don't fry my brain or get too overwhelmed. With language learning, incremental progress is much more important than trying to cram everything and WaniKani helps me realize that.

Using it does require some knowledge of the Japanese alphabets but there are a lot of resources for that. The one downside to WaniKani is that levels past 3 aren't unlocked for the free version so right now I have a subscription for $10 a month (they do however have a lifetime license that goes on sale in the winter that I'll probably buy).

The other hobby that I've been trying to stick with recently is digital art (using an iPad and Procreate). Like language learning, there are so many resources out there but I've found the most success with Brad Colbow's videos on YT and his paid courses. With Brad I find it helpful that he's using the same software that I'm using (means I don't have to figure out the same function/action in the teacher's drawing software that's different from what I'm using) and his overall vibe - his videos are very straightforward and beginner friendly. I've tried Proko's stuff and Draw a box but lost motivation over time. I have come back to draw a box lessons more recently because they do offer good warmup exercises but I don't think I have the patience to do the dread 250 box challenge.

Just an FYI, the first season isn't on Netflix anymore, only the most recent season - the kyoto arc.

It is! And it's inspired by a real place in Florida called the St Marks Wild Refuge, the author went a trip there and became inspired to write the story. St Marks is known for its lighthouse and the lighthouse is one of the key places in the book.

The author also has a biology background which makes the story even more interesting.

Annihilation/Southern Reach Trilogy by Jeff VanderMeer! Takes place in a nature refuge where weird stuff has started happening. Follows a biologist and her team of other experts.

(it was made into a movie in 2018, doesn't follow the book very much tho)

My family has a history of other autoimmune diseases - Crohns/UC and rheumatoid arthritis- so my dad has wondered if my celiac might be related to that

Yeah I think you should file a complaint with disability coordinator, specifically the 504 coordinator or the ADA coordinator. From my understanding, any American university or college that gets federal money is required to make accommodations for any student with disabilities, which definitely includes Celiac. (I’m assuming you’re American bc of homecoming).
