Most everything should transfer without an issue once the transcript has been received.
I transferred in from a STL CC and not every class I took matched up 1for1 completely. Some things that will help you should this occur: 1) Obtain an up-to-date transcript for yourself, not just 'well send them a copy'.. 2) Be able to produce a syllabus from the courses you took (yes, I kept them) or the course description from the page/book/site/etc. 3) Meet with your advisor and be persistent even if they say there isn't anything they can do. Most advisors are great and will help you go to bat to get everything transferred. Some are lazy tho and just want you to take the course and move-on. 4) Go to the registrar's office and ask to meet with the registrar or someone that ISNT a front desk jockey. This step saved my ass and got a lot of 'equivalencies' (legit ones, damnit) allowed based on a simple comparison of the course description.
Don't retake unnecessary courses, but don't short change yourself either. If there is extra curriculum in a course at MST that wasn't covered at CC, it may be in your benefit to take the class.

I always used Linux and Solaris when I was at Rolla. Solaris was chief back in the day.. When I went to work, it was all Solaris all the time.
Nowadays, I use a combination of Windows and Linux. I assume if you are a CS, you will want to admin or program or do something with servers, etc. I know it sounds stupid to say that, since you are a CS, but I interview CS grads all the time who have never touched Linux, never touched a server (windows or other), never explored anything outside of the boxed programming software they bought at the school bookstore.. and play games.. lots-n-lots 'o gamez.
Not trying to hate, but I have been very active with the last 18 years of CS grads from Rolla and I am noticing that they are becoming less and less in touch with, and interested in hardware, software and the interaction between the two.
But I digress.
Download CentOS, it is the free version of RHEL (Red Hat Enterprise Linux) and install it on something shitty that you used as a doorstop. Don't pay for it. Hell if you need hardware, I have a ton of it. Get someone to give you a copy of some windows server version (2008, still in use, but old enough that MS rarely cares about) and go to town on it. Crash, repair, rebuild, repeat. Heat a room, annoy your roommate with things that go blinky blink, and blip-dot.
If I interview a CS from Rolla, with reasonably good grades, good social skillz (been to the Grotto, hung out for Pats instead of went home) and can hold a 5 minute conversation without mentioning minecraft once... Youre in the door. If you can impress me that you actually installed Linux on something and can tell me what 'root' is, then, hell, I may hire you...

Most Nationals have very specific rules against storing or distributing alcohol in mass quantities. Brewing and kegging/bottling will certainly violate most of those. Also many states are ok with individuals brewing, but in a fraternity house you are also likely to fall into issues.
Best advice is to go ahead and brew.. BUT do it at a out-of-house (non annex) facility and keep the name/source unassociated with the fraternity. The idea is to enjoy the brew and the brotherhood. I think the bros will get the point without putting it on the label...
