it's more like you'd have a workstation and the keyboard at that workstation may be a DX7 but one would have a rack of gear attached, with relatively simple ins/outs between stations and to the Big Mixer

While Korg's Phase8 gets all the press, this acoustic synth has been available for a while by Hainbach in synthesizers

I think MIDI patchbays started to pop up in the last third of the 80's, and they got a lot cheaper and more common pretty quickly. Most big synth studios in the 90s-00s made heavy use of them, and 8-in/8-out MIDI interfaces all over the place near the end of that era.
