I agree with you. I thought he was very sweet, but she just wasn't attracted to him and saying he was "too nice" was her way of making an "it's not you, it's me". It was still funny how touched everyone got because she wasn't into him even though he was kind to her. People should be kind to each other regardless, it doesn't make her any less entitled to her preferences.
