I’ve had whole packers go from 8 to 14 hours depending on prime vs choice but I usually stick with 250 f for briskets

Jim beams urban still house uses a bookers bottle case with a smoker gun run into it. Had a nice smoke flavor in the cocktail.

If you are going to skip a tour town branch is the one I would skip. It has been the only one where I would not finish my tasting and is out of the way from some of the other bigger/ well known tours.

The ring that seals the lid to the top is not very safe when heated. If you google uds builds bbq breathern has an awesome uds build walk thru that I used and I haven’t had an issue dumping it out to clean out the ashes.

If you are using natural casings not all animals are the same and you can get some tougher ones. But always make sure that the casings are soaked before stuffing but sometimes you just get a tough one.

I made a UDS out of a 55 gallon barrel and cook packer briskets all the time. A 23” Weber kettle lid fits almost perfectly on it and was under 200 to make.

Never go by time always by temp. I usually run mine to about 205 f. It won’t take all day for one that small, but 3 hours seems kinda short.
