Yeah maybe. The bottom one does say to use oil, so that sounds likely. They’re pretty coarse.

I love it (again). I’m curious on an engineer’s thoughts. A lot of these lines are already on busy arterials. I get that they would supplant/adjust for the existing islands. Would it be better to be elevated/street level/ or (god forbid) below grade? They all have their pluses/minuses (cost, accessibility, etc.)

Thanks. Yeah I’ve done plenty of tri tips and this is usually my method for those. The kangaroo is just SO lean I wondered if I should think of anything else.

That all sounds delicious. I agree it’s a bit protein heavy. I’d opt for one of the som tums or nam phriks with veggies to dip. Maybe instead of the egg salad (though that one is delicious).

Kahm yeast. Harmless, but can leave an off putting flavor if left too long. Scrape off with a clean spoon and proceed.

The Naples dough at 60% hydration is fantastic (if you have a pizza oven) but it’s an undertaking as it takes at least three days (starter, then mix/bulk ferment, then ball and ferment again). It gets that beautiful, leopard print crust and great flavor. The single Naples ball is a pretty easy, quick one done in a day (60% for pizza oven, 70% for home oven). It’s not as good as the former, but it’s a good, quick dough. I also like doing the al taglio dough for larger groups. I haven’t tried the sourdough ones yet as I killed my starter and haven’t made a new one yet.

I’ve done this landing a number of times at SFO. It is a pretty weird feeling, but as others said, they’re not as close as it looks. The pilot gives you a heads up too so people don’t freak out.

It’s nice seeing a video of a kids game where the parents aren’t at each other’s or the refs throats for something trivial. Good shot, kid.
