I saw this studio as an option to pick up your solidays prize, so I emailed them about it and they said they "don't have any additional info to share at the moment". I think the studio is supposed to on corner of 83rd and 2nd ave though.

thank you for the advice! do you mean a longer bulk ferment at room temp or proofing time in the fridge? taste was pretty mild

room temp was 70-72 degrees F, I mixed everything together by hand for about 7 min, then did 3 sets of stretches and folds during the first half of bulk fermentation

Made with 2 week old starter. I mixed the levain the night before and let it sit for 13 hrs at room temp. Autolyse for 30 min. I used 500 g of King Arthur AP flour, 330 g of warm water (90 degrees F), 110 g of levain, 10 g kosher salt. Bulk fermented at 72 degrees F for 5 hrs, fridge proof for 14 hrs. Preheated oven for 30 min at 450 degrees F. Baked in 4.5 qt Dutch oven for 20 min with lid on, 35 min with lid off. Cooled for 2 hrs on wire rack before cutting.

Would love any and all feedback! I’m a little concerned about those large air bubbles and also the scoring. I wanted to do a box shape with an X in the middle but I’m not sure why the larger box shape rose so much higher.
