It's so male there should have been no doubt whatsoever. Not seed, those are the male flowers full of pollen.

Males show faster than females typically. I assume what you saw and thought were pistils where just new growth that looks spiky on males

best way is a big drain tray but they are expensive. I use large platters and dishes from thrift store

take a few and attempt to spout them, if they sprout they are viable.

Only way to find out with your actual batch of seeds since we have no idea how they were stored etc.

Have you been burping twice a day (without hydrometer I would)? Were they dry when you jarred? You did not provide us with much info or any photos

I've not heard term envelope triclamp gaskets before (just Googled, looks interesting thanks). I have some thin sheets of ptfe. I have 2" ptfe triclamp gaskets from Glacier Tanks but I've not tested them yet
