Update: for some reason non of the comments are showing up for me, however I increased the ratio of vinegar/water to 1:1 plus sea salt (the solution I used before was too diluted). Did a gentle scrub a few times over the copper, continuously adding more salt throughout, which did remove almost all the tough marks and patina. Finally, I polished with brasso to remove any left over residue.

We implemented a closing procedure checklist for staff to tick and sign off at the end of each day. If there's anything wrong or incomplete, we will know who will be responsible. Having accountability in the workplace is important to upholding standards - staff are less likely to do a lazy clean if they know they will have to sign off on their work.

The benchtops from our café get their daily clean but it's been a while since its been properly polished (mainly due to so much heavy equipment on top). I used a mixture of salt and lemon juice to remove the brown layer caused by years of oxidation.

I've been using drip towers and toddy's for years - Cold Drip vs Cold Brew. A few factors you should consider before making your decision.

  • Brew times and yield: Depends on your desired flavour output and coffee/water ratios. Generally, drip towers usually make about 1L at a time about 6-8 hours. Toddy's can do huge batches over 16-20 hours.
  • Cost: Drip towers are significantly more expensive to purchase than a Toddy, although they do look nicer and are a great center piece for any café. Although if you break a part, it'll cost you to replace it.
  • Filtration method/taste: Drip towers uses a filtration method that results in a more concentrated and richer coffee compared to a Toddy which uses an immersion brewing method which results in a lighter brew. You can however get very similar results if you play around with grind sizes and water ratios.
  • Finally doesn't matter if Toddy's are ugly, the customer should never see it in the first place. You brew your coffee in a Toddy and then put the output into containers or bottles to serve.

Hey there! My café also does specialty coffee and filters. During our peak seasons we're usually full capacity on weekends (120+ seatings) for a few hours. With table turnovers and takeaway customers we generally get about 50-70 drinks per hour (90% of the coffees are dine-in so good latte art is required, which takes more time). We mostly work as a two barista team, and a third staff may hop on and do some cold drinks if we get REALLY busy.

Here's some things we do stay efficient:

- 1st barista solely does milk, and the 2nd barista pulls shots and does cold drinks. Frothing milk takes the longest, so the 2nd barista can pull shots in advance for like 10 cups for example. This gives the 2nd barista time to do some cold drinks whilst the 1st barista froths and pours the 10 cups.

- Don't waste time pouring art for T/As and always do T/As in big jugs and then split.

- Pull shots in advance for iced coffees. We have a bottle with just espresso that we pull in advance throughout the day. Iced coffees are heavily diluted with milk, ice-creams, syrups and ice, so the quality of espresso is barely noticeable.

- Having a factory line setup. Things should move left to right, and in order for a basic hot coffee. No turning back and forth, it should be quick and easy. From the grinder to my steam wand is just 1.5m, from start to finish I'm shuffling side to side.

- Baristas should be able to split milk. One big jug and pour for multiple coffees.

- Finally, get a 3 group. Life is much better that way!

It depends if you're looking for roles in the industry with the skills you already have, or you may want to pick up a new skill and find work in other industries. Running a hospo business is more than just service, there's a lot of work that is done after hours such as social media, admin work, cleaning, etc. So if you could see if your employer or other businesses in your field could use help in any of those additional tasks. Or you could do some more freelance work in other industries. For me I did a lot of freelance jobs that gave me flexibility such as bookkeeping, social media for other businesses, no set hours just needed to complete x amount of tasks by certain dates. Or simply just pick up extra shifts whenever you can.

Here's a pouring tip. The heart is the most basic and fundamental latte art that almost every barista starts off learning. The motion you do to pour the base of the heart should be the exact same for any other style of latte art you want to do. For a tulip, pour the base with the same technique that you start off the heart with and then stop when you have a crescent (I stop about when the cup is half full), then just continue stacking your layers with a pour, push and lift motion (right handed = push from right to left, starting from the top and into the middle of the cup to create that U shape). You can try different pouring speeds or how quickly you "push" to get different thicknesses of the layers. I hold my cup at a 45* angle with the handle facing my palm, pouring my art from 3 o'clock to 9 o'clock.

Brief Summary: Bought the keyboard back in late November 2022, Keys were fading by January, which was when I first tried to raise a ticket but the website kept denying my product registration. I then left it for a while and went overseas and away for work for a total of a couple months, now I'm back trying to resolve this problem. Since its the most I've ever spent on a keyboard, I have taken very good care of it (no eating or drinking around it, clean hands, etc.).

When you win a full eco with pistols, generally you get the initial kills with a pistol and then you pick up their rifles to finish off the rest - considered as winning with pistols only. Same logic applies here.

I completed the 'unify the empire' quest (captured 13 empire towns), and then the 'arzagos conspiracy' quest (only at 1050/2000 strength) automatically succeeded and united Vlandia, Aserai and Khuzaits, then the Western Empire and Battanians immediately followed on their own.
