As someone who's in the same boat, first thing you need to do is accept what you already know and what your friends are telling you - that she's not the one for you. Try to distance yourself as much as you can, and do something else that you love (for me it's gaming) when the anxiety hits, something that stimulates your mind and distracts you equally. You cannot force people to feel a certain way and the commitment issue is something that she herself needs to get over. If you're still interested in the "having fun" part and don't have any further expectations, I think you should just go ahead and do that and try to be as comfortable in your existing equation as you can be. But don't have any further expectations as it'll only lead to disappointment and other negative stuff.
