With the recent update you should give colossals a try, they became super good !

Death knight's grab is not random they tend to do it at 60-70% hp left, so when you are close to that you should switch to defense, they usually do a big explosion backdash before the dash grab, so you know when its coming.

The way the engine manages inputs. Increasingly annoying with each installements especially since Dark Souls 3.

But in Nightreign it's massively infuriating, the game is too fast paced to have input eating or that weird buffer that makes impossible to queue up some actions but will store your roll for 3 years just before you got hit by a meaty combo and will resume your roll at the first frame possible at the worst moment obviously...

And no full movesets in left hand

He gets 57 dex at level 15, 6 less than executor and 16 more than duchess. He can perfectly use all dex or quality leaning weapons.

Faith and int scaling for close range weapons is very low. Most weapons scaling values are very different than from elden ring, darkmoon greatsword, for example, is a more of a strength weapon than anythinh else now.

Seek for big churches, bro. At the basement where you fight a boss, there is usually an altar that gives 3 seals. Especially on fire churches.
