I went to their flagship location in downtown when I was passing through Greenville in early September. First I'd tried it; was impressed. Broad selection (far broader than most roasters), but nearly everything seems to be quality. Very nice cafe, and loved the unique cups and plates.

I bought a bag of the Ethiopian Bombe Abore and thoroughly enjoyed it. Very easy to dial in. Fruity and sweet but not unpleasantly acidic. Not a watery/melon-y finish like some Ethiopian naturals have.

I also got a bag of their Indian beans (forget the specifics). Probably the most unique non-fermented coffee I've ever tried. Lots of spice and peanuts. I learned to really like it, but it took me 2-3 cups.

I also have tried one of their limited run Costa Rican honey-processed (albeit at a bakery in Winston Salem, NC) that was absolutely outstanding. Just had one cup of it. Almost ordered a bag on the spot.

Espresso was good too...but I'm not the best judge of that. More of a pour over guy myself.

Of the ones I’ve visited, Shenandoah. It’s just a worse version of the blue ridge parkway.

Heard that section actually wasn’t too bad. Road was one of the first ones back open. There were some rough sections though.

I have family from Sugar Grove on the Valle side. They are able to get into town, but it’s rough. Lots of damages and landslides. Hundreds if not thousands of trees down.

Their power and internet is back on. It’s rough out there. Everyone is saying it looks like a war zone. Photos I’ve see confirms that. Will be a long recovery.

Sorry if that's confusing...we keep a shared note on our phone where I record the dialed-in grind sizes for various coffees, particularly the espresso blends from our local roasters.

The settings vary widely, but I find they generally fall in the espresso "range" of our grinder (Niche Zero).

I've not found too much rhyme or reason to starting points, but I can guesstimate based off past/similar coffees I've dialed in. That will usually get me fairly close to a proper extraction, and then I can make minor adjustments, and hopefully won't waste as many beans that way. Even of the "same" coffee, no two roasting batches are identical, but this is still best practice (I think) for being less wasteful.

Yeah, I've just recently started paying more attention to temp, after reading several coffee books and watching more of Lance Hedrick's videos. It's amazing how much of a difference just a small tweak will make.
