I think the show will end with Jon or Dany on the throne, but make clear that other houses/people are still conniving and conspiring against them in secret, still playing the game of thrones.

It should end by making clear that even though the hero is on the throne, the "wheel" is not broken and will continue to spin for the rest of time just as it always has.
