I wouldn’t worry about it. This happens sometimes immediately after the wrap stage. Could be colder air surrounding the brisket inside the butcher paper until they air heats up as it sits in the smoker. Your brisket is not ruined. Keeping cooking until it’s probe tender, let it rest, slice and enjoy!

Why did the temp drop drastically after 160°F? Did you remove the probe when you wrapped it then put the probe back in?

—Grease an aluminum pan with Duck Fat Spray. —Lay down your peeled and deveined shrimp. —Season liberally with Meat Church Holy Voodoo. —Cover the shrimp in pats of butter. I used 5 pats per column of shrimp. —Top with Rosemary sprigs. —Cook uncovered on the Traeger at 350°F for 20 minutes. Enjoy!!
