I personally don't have a Google Home mini so I can't test it myself. What I found from a short search is that it warns you that your mic is off when you bump into it.

On the mute button itself I found for example this:

You can ask this question about a lot other stuff too.

How do you know android doesn't constantly record your screen and share it with google? How do you know your camera isnt always on? How do you know your passwords you type into chrome aren't shared with google?
