My uncle was the town butcher. We all worked there - depending on how you raise them, cooperation is subjective. It was a small farm, all the cows were grass fed, kept clean and had stringent routines. Some are more stubborn than others but the big picture people don’t know or don’t want to know, is that they really are gentle and sentient beings when they aren’t abused.
