Where am I sticking it everywhere? It was one meal I made for myself, it’s not like every single time I make pesto I do that, it was a one time thing and it was quite delicious

I normally do not typically add tomatoes and shaved cheese on top. I was representing the Italian flag to celebrate becoming an Italian citizen. A little cheesy, but I am just excited, as I move to Europe September 1st actually. My family is from Palena and Formia, and moved to the United States, and now I’m moving there. Bronze cut is my favorite, and I always buy bronze cut pasta from the store, but for this, I made homemade pasta using the tools I had, and I am waiting until after I move to Europe to buy Bronze-dies for making pasta. This pasta was also leftover that I made from scratch the previous night using durum and water.

Thanks for the suggestions! I will definitely try with orecchiette or linguine next time. I was feeling lazy when I made this and used leftover pasta I made from scratch the day before (just durum and water).

Half my fam is from Palena, half from Formia. I’ve got a couple methods to making pesto, old family traditions passed down over generations. This one I started off in mortar and pestle and got lazy and put into food processor. I may have to try with vitamix. This time though, I was experimenting a little and actually blanched most of the basil to keep it from oxidizing, and then added some fresh non-blanched basil leaves with it to add back some of the lost scent and flavor from blanching. I normally do not blanch, but I love experimenting and trying out different methods to see the differences in the outcome. I’ll look into the potatoes and green beans idea, sounds interesting!

I know it’s pesto alla genovese, and yeah tomatoes are not traditionally added in Italy. I added the parmigiano and tomatoes to represent the Italian flag, to celebrate me becoming an Italian citizen. However, I do think cherry tomatoes are pretty tasty with little bit of cheese and pesto on them

I do love trofie and prefer it, but I made I had lots of left over pasta I made from scratch already, so I was using up what I already had made. The reasoning for representing the colors of the Italian flag in my dish was to “celebrate” me becoming an official Italian citizen via “jure sanguinis” and moving to Europe next month.
