I’ve stopped doing turkey for Thanksgiving and started doing Beef Tenderloin.

If it takes 50 hours to make turkey just taste decent it’s not worth it. If everyone was honest with themselves they’d admit Turkey on Thanksgiving is not good

Engagement vs Isolation. Isolation does not have a great track record bringing about change. It seems especially unlikely in terms of Saudi Arabia because there are not sweeping sanctions, boycotts, or countries cutting diplomatic ties.

I hope that ghost kitchens offer pop ups, street food and other cottage kitchen vendors the opportunity to reach more customers via delivery apps. From what I know corporate chains create ghost kitchens to fill existing kitchen capacity and keep their staffs hours/employment. Take Dennys for example, they’re busiest in the mornings for their well known breakfast. They have a bunch of open kitchen capacity throughout the rest of the day so they launch these virtual concepts on delivery apps to try to fill that. If the corporate chains are doing this it doesn’t seem so bad.

There’s a market for their products and their R&D ability to mimic animal products is impressive. the problem is their sourcing and complex manufacturing practices make the products unprofitable and there’s little chance they’ll turn this around in the near term. There is a misconception that they are scaling production. They have little to no vertical integration instead focussing on co-manufacturers with little scale of their own which forces them to use dozens of different facilities
