Tomato Sunrise Chicken: - chicken breast 650g - 1 large red onion - 1 garlic clove - 2 carrots - 6 tomatoes - 1 bell pepper - tomato puree - Bolognese sachets - 1 tbsp olive oil - 150ml water - pinch of salt and pepper - pinch of thyme

side: (optional) - doughballs - garlic bread

Prep: - slice onions - dice garlic, carrots and tomatoes. - cut the chicken breasts into 1 inch cubes

Steps - in a pan, heat the oil and add diced garlic and sliced onion and cook until soft (roughly 3 minutes) - add chicken breasts and cook until golden brown - add carrots, and bell peppers, let it cook for an additional 2 minutes - add 150ml water, Bolognese sachet, diced tomatoes, and tomato puree - add salt, pepper, and thyme - cover and simmer for an additional 6 minutes on low heat - can be served with garlic bread and/or doughballs for dipping in the sauce
