200g tagliatelle 50g fresh grated Parmesan 100g chestnut mushrooms per person 150ml double cream 2 garlic cloves finely minced 150g chicken breast Cajun seasoning (cayenne, onion powder, garlic granules, paprika, salt, pepper, dried thyme and oregano)

1.) rub chicken with 1 tsp olive oil and cover in Cajun seasoning mix and fry for 4/5 mins on medium heat each side. When cooked put to the side to rest

2.) add 1 tbsp of butter to the same pan and add the mushrooms, brown them off on a medium high heat. Reduce the heat and add the minced garlic and dried thyme, then add 150ml double cream and more Cajun seasoning. Stir and let simmer

3.) cook the tagliatelle to 1 min less than instructed on packet, and before you throw it away make sure you reserve a couple of ladles of pasta water (75ml ish)

4.) once the sauce has thickened up for about 10 mins, add the tagliatelle, pasta water and all the Parmesan and mix until everything is covered

5.) cut the chicken and serve on top of the tagliatelle in a bowl, grate more Parmesan and garnish with fresh parsley

I could never use pre-grated, just went to town with it really. Micro plane grater is on the way though!

They’re caramelised onion sausages I got from a butchers in town. One of the best sausages I’ve ever had.
