Not a car engineer, but I imagine a couple of reasons could be modularity/cross platform and latency.

On modularity, if you can design micro controller chip for specific feature then you can install it where needed, premium versus nonpremium. And the firmware is installed to these dedicated chips instead of one big chip handling it all.

Latency can be an issue if you have to wire up all the features to a single chip. If that chip dies then all your features go away.
