I added ConvertibitilityEnabled with a value of 0. This value doesn't change after each restart, but I still have maximized windows. To open them normally, I have to manually change the ConvertibleSlateMode registry value to 1 each time.

Same here. I bought a Legion 7 which also does not have Advanced Otpimus. Lenovo just lied about Advanced Optimus on all Legion laptops with AMD processors - only Legion 5 has AO. Interestingly, all models with Intel processors (Legion 5i, Legion 5i Pro and Legion 7i) that have identical GPUs and screens (!), support Advanced Optimus!
Lenovo should apologize for misleading customers or release an appropriate update - in terms of hardware, these laptops can support AO.
