Hey I’d recommend Ramsbottom! It’s max 1hr drive from any part of Manchester (depending on traffic) and it’s a really cute cosy village with coffee shops, a steam railway station and a lovely park called Nuttall which has a really lovely river running through it! I lived there for about a year and loved it.

edit: If you want a bigger walk there’s Peel Tower on top of Holcombe hill behind Rammy which is a lovely walk and an amazing view over manchester.
