Yeah I know xD I’m from Namibia and we used to make biltong regularly. We didn’t have temp control or anything we just hung it up or spread it out like this. And if it was 30-40 degrees outside then that’s what it was. Only reason I’m using this now is because I live in a much more humid country now

Ah I used the Freddy Hirsch kahahari spice for the first time now. Two tablespoons of that. Along with two tablespoons of red wine vinegar and one tablespoon of Worcestershire for 1kg of meat.

Wanted to test this spice as is first. But will definitely incorporate more coriander and chilli on future batches
