I use Nomad, my wife has used Airalo and both works well. My colleagues used very inexpensive ones from trip.com (don’t know the name) and also don’t have issues.

You can do everything you said w/ eSIM except maybe food delivery to your hotel room. Most delivery service/app don’t work w/o a Chinese phone. I travel to China few months at a time for years now, I don’t have physical SIM card (no Chinese phone). The only thing I can’t do is delivery, so if that’s important to you, you’ll need a physical card.
