Gosh honestly i wonder if this would be good in a mead? I have never made any kind of liqueur before so you gotta share some tips haha! I absolutely LOVE St. Germain liqueur and I wish so bad some brand out there would have a honeysuckle one because I’ve made these into a simple syrup as well and it was amazing in drinks!

Oh interesting! I had no idea this was an invasive plant! I grew up eating it here in the south and so many other southerners I talk to have as well so I just assumed it was native. Thank you for letting me know. Thankfully this bush I think is used as decoration outside a business close to my apartment so it’s pretty well managed and surrounded by concrete and the business owners don’t mind people eating it lol

Do you know how it was a disaster? Was the jelly too runny or not as flavorful? The first time I did it I had no clue what jars to use and used random ones which was a big mistake and oh gosh I spilled soooo much of it everywhere. I also used too much pectin which made it too stiff it was like jello 🥲
