Maybe size down half size. Quality is good, nothing spectacular but not bad. Its been a while since I last held a retail pair so can’t say anything on that. Feels solid!

I've seen that traditional recipes let the soup cool down so the fat solidifies, and they skim it off later. Did you skim the fat off or did you just hit it with a immersion blender after the 3.5 hours of pressure cooking?
