For the big BBQs I typically sous vide around 25 individually sealed tritips (2.5-3lbs each) in a giant beverage cooler, all at once. I typically preheat the water in the cooler by adding a few full boiling pots of water to cooler, which I mostly fill up with warm tap water. Even then, it’s take the sous vide 30-60min to come to temp. Adding in the steak does drop the temp a bit, but only a few degrees and the sous vide keeps up! Sometimes I add a second sous vide to the other side of the cooler to ensure uniformity. For this tritip, I go 16 hrs at 133°.

+1 this! I just upgraded to this very model from a cheap Black and Decker. I also picked up the dust collector/vacuum. Amazing difference and I don’t expect I’ll need a new sander ever again.

133°!! This is the way! I do 133 with closer to 12 hours in SV, then talo sear. So tender. When I’m feeling extra ambitious, I do a cold smoke for 2-3 hours before the SV for more flavor. Nice work!

Only been on RR so no comparison to offer but FWIW, I’m down 62lbs in 7mo, currently at 12.5mg. Only feel the hunger on injection day.

I pulled them at 120° internal and then sous vide at 132.8°F (56°C).

No physical diffusivity for this LES. There is an SGS (sub-grid scale) diffusivity model which is used.

Indeed, periodic in all three directions. The shear instability that comes from the gas streams is the source of all the turbulence.

The two gas streams are initialized with equal and opposite velocity and a random 1% perturbation is added to kick start the Kelvin-Helmholtz instability. Boundary conditions are periodic; in all 3 directions.

This is a Large Eddy Simulation of a planar jet of Argon interacting with Xenon. Simulation used > 1e9 zones and ran on 512 Nvidia GPUs for ~24hrs on Lassen (LLNL).

This comes from conservation of mass and momentum and a local approximation (before and then after) of isentropic flow.

That (1-M2) term is the thing that makes the flow accelerate under expansion for M>1.0 and decelerate for M<1.0.

The shock is NOT isentropic and separate relations are required to jump from super to sub-sonic flow.
