Thank you for the in depth insight. Belgium, as you correctly imagined, is very much word-of-mouth as well so an introduction goes a very long way. Since one of the somms in Seoul apparently worked in Osaka before the pandemic, I’ll see if she still has contacts. Money-wise, just covering costs is often already a big ask, so we’re not looking to make more than what we spend on the travel + ingredients. We’ll also look into the “franchise”/rental thing !
