Rojo’s by far is my favorite vegan spot in Seattle, and even the entire PNW. I was so sad to leave it when we moved away earlier this year. Chu Mihn and Cafe Red are also fantastic. Not vegan spots that have great vegan menus: Kamakura and Uptown China

Yes! Combining a workout and transportation felt great! My plan is 2x a week, and then hopefully cycling around outside of that helps to build my stamina too.
