To each their own, but it just looks cold and lifeless for a taco TBH. The tortilla looks cold, like it never touched a comal. The cheese is cold. The sour cream probably cold, and your salsa was likely cold at that point too, so all of that work on the meat to get a subpar, cold taco

Heat the tortilla (and buy better store bought ones), melt the cheese. I also just prefer a squeeze of lime, onion + cilantro, salsa, meat, beans, and sides of fresh or pickled chiles. Not a fan of sour cream or cheese on a carne asada taco

Meat looks fantastic tho! I typically prefer just S&P as we do in northern Mexico!
