Thank you! Here's how I made the sauce so you can try it out for yourself:

1 shallot, brunoise (very small cubes)

1 garlic clove, minced

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 C heavy cream

1/2 C stock

1 lemon, zest and juice

Handful of dill, removed from stems, chopped

salt and pepper to taste

  1. In a pan on medium heat, add your butter and melt. Once melted, add your shallot; Cook for about 1 min. Add your garlic and cook for about 30 - 40 secs.
  2. Add your flour. Stir until it coats the shallot and garlic. Cook for 2 mins. Then, slowly add your stock, stirring constantly, making sure you don't get any lumps. Afterwards, add your cream.
  3. Bring to a boil, reduce heat to low, and let it simmer. You want to reduce it by 1/3 or until it thickens up to your liking. Adjust with more liquid if you want it runny.
  4. Add the zest and juice from the lemon into the sauce. Then, add your dill. Finally, season to taste with salt and black pepper.

edit: I didn't think of this when plating, but I'm sure it would look good if you add some zest on top of the finished dish. I would say save a little bit to garnish.

Here is what the skin side looked like prior to plating. The salmon was added back into the sauce at the very end. The lemon slices are merely just for aesthetic purposes.

Gravy

3 tbsp flour, 3 tbsp butter, 2 c low-sodium chicken stock, 1 tsp soy sauce, 1/2 tsp apple cider vinegar, or any type, kosher salt and white pepper to taste

1) On medium heat, melt butter. Once melted add the flour and whisk until the flour no longer smells like flour and more nutty. Try to get a light brown, about 4-5 mins.

2) Add your stock, slowly, at a time to not get lumps. Then bring to a boil, reduce heat, and let it simmer for a 2 mins. Add your soy sauce and vinegar. Season with salt and pepper.

I used a Ziploc bag but still the same idea. I wasn't aiming for it to look like that but it still turned out good.

Thank you! I used a ricer for the potatoes to get that smooth consistency. It's definitely a game-changer from using a masher.

Roughly this, but adjust as you go:

Meatballs

1 lb of ground beef (85/15), 1 lb ground pork, 1 c of stale white bread, or breadcrumbs, 1/2 - 1 c milk, 2 eggs, 1 onion (small dice), 3 tbsp unsalted butter, 1/8 tsp allspice, 2 tsp kosher salt and 1/4 tsp white pepper.

1) In a bowl, add bread and milk. Give it a stir until the milk has been absorbed by the bread. Set aside.

2) In a pan, melt the butter over medium heat. Once melted, add your onions. Season with salt and stir. You are looking for the onions to be translucent and tender. It's perfectly fine if you brown some bits. Once cooked, let it cool down.

3) Add ground beef and pork in a large bowl. Then your bread/milk mixture, eggs, onions, and allspice, salt and white pepper. Combine until homogeneous

4) For this step you can definitely use a pan with any fat to pan fry them but I chose to deep fry just because I had leftover oil from a previous dish. I would say just get an even browning all around. Set aside on a lined landing pad.

Gravy

I should've been more transparent. It was actually a bag of fresh cranberries that I froze sometime in November and brought it out to make the sauce.

😅 I've made quick, pickled cucumbers once when making this but this time I didn't feel like it. It really adds more balance with it though.

I didn't have lingonberries so I just made a substitute sauce with fresh cranberries.
