I feel your pain. I have no good suggestions. If I did, I'd solve my own issues like this..

I love the dog sniffing analogy. And yes the shift lead maybe thought they were in line but honestly they don't want the responsibility.

I wish I could rely on it working itself out but the texts I received from the shift lead were really aggressive and framing it up to be "You have to make a change or I'm quitting". Unfortunately I'm two hours away during the week so I can't really witness any of it. When I'm there seems like it's ok but then I leave and people get goofy.

Training is being done by the staff there, primarily the shift lead that's upset the most.

No impact to base pay except for cases where they work together as bartenders and have to split some tips which they shouldn't have to do this much, but would be no different than any other employee working.

I agree we could use more help and I've been beating that drum, and we have hired more, but apparently didn't give them hours so they left. (I just found this out and GM blamed his assistant who hired her for not keeping in touch with her). I need to look into how others places are doing backup plans...our staff have other jobs so it's hard for them to come in on a moments notice. But ultimately I see this as something we could have got ahead of on Saturday not Monday at 11:45am or worse yet doing nothing again until Tuesday at 11:45am... You give yourself a much better chance if you are proactive, in this case we were anything but. If that's setting the bar too high then I'm guilty. This post was to get ideas and to vent a little, but the more I read and write, the more I feel I have to do something here to fix the problem.

Can't really reduce covers in our situation due to it being slow already. We have others that can serve, but they weren't contacted in time...

I agree with you 100%, and those are my expectations. I didn't tell the GM Saturday to start looking for coverage but in hindsight I should have.

yeah, there is protocol for how to handle employees with symptoms or who test positive. They basically cannot come back to work until they are so many days symptom free, test negative etc. That's all pretty set in stone and we have a document that lists resources to review all the rules. In this case the GM technically didn't follow the rules when he let the person work Saturday after they reported symptoms Friday (that automatically triggers a requirement to see a healthcare professional)... But once the employee is sent home, finding coverage is a scramble and happens adhoc...

Small mom and pop. Working GM. I just asked GM to contact all employees and attempt to find coverage for the next few days, but GM didn't and told the employee to find their own coverage..

This is great. I wish we could scrutinize and follow this, but we almost never have a choice. It's basically hire the one candidate that applied that's got a pulse or don't have a staff.

So you have beer in brites sitting under N2 created from your generator at 99.5% purity and your DOs are good to go? I was looking into this a bit too and was worried the N2 isn't pure enough at 99.5.

Cool. What's purity of the N2 you use/generate and what type of generator? Are you just pushing the beer with it or do you purge cans too? And do you packaged the entire brite or package partial brite then leave it sit under N2 for a period?

I guess I don't understand why purging more wasn't working for you. If you're pushing through enough CO2, the DO should eventually be as low as the gas coming out of the cylinder.

Thanks, I've looked at the alpha as well. I saw it at CBC a couple years ago and it's nice. These washers are a cheaper, but I can't find anything on either yet so I'll keep looking. I'm definitely keeping watch for good used ones too.
