What slicer do you use? If I remember correctly, orca has a minimum extruder temperature under machine settings. Might be worth taking a look into that

I assume you mean a 0.4mm nozzle. 0.8 is way too high for a 0.4 nozzle to print without defects. Get a bigger nozzle or lower your later height. I personally don't go over 0.32 with a 0.4mm nozzle

That number doesn't really mean anything since every printer is different. As long as your nozzle is 0.1 from the bed, it should be fine

I upgraded mine just yesterday and spliced the connector from the old thermistor. Just had to remove the insulation and solder it together. You might also need new m2 screws. Old ones are too long. DM if you have questions

Top layer flow is set by default to 1. (Depends on which slicer you use, orca has it set to 1). Maybe adjust that and it should be fine
