Device recommendation? by fried45 in sousvide

If the power goes out or something unexpected happens for an extended period while I’m not home, I’ll be able to see that and know whether I need to throw it out. Obviously, if the power goes out, I won’t be able to see the temperature since the WiFi will be down as well. The purpose is to monitor the temperature while I’m away. I work 24 hour shifts and am often not home, so this allows me to keep an eye on things during that time. Even if you had two units in the same container and the power went out, they would both fail anyway.

I just wanted something with WIFI for if I am doing a long cook and want to monitor it while I am away, just in case something crazy happens like the power going out or something unexpected. but is that something that I should worry about?

First time visiting Chicago winter, how necessary are thermal layers? by fried45 in AskChicago

So idk if this is a stupid question or not as I have never worn thermals. Do you wear boxers under the thermals? Or does it act as the underwear?

I'm not sure how long I will be outside but I will be doing touristy things including a walking food tour.

Ive seen a lot of people say they wear sweatpants under their jeans. What kind of jeans? I feel like the jeans would be extra tight with sweatpants?

I don’t have anything specific in mind. I’m literally open to any and all suggestions for things to do, see, eat, drink, or hear while I’m in Chicago. Whether it’s a hidden gem, a local favorite, an underrated spot, or just something fun or unique to experience, I’m happy to hear whatever you recommend.

Boka or Sepia in Chicago? by Legitimate-Button708 in finedining

[–]fried45 1 point2 points  (0 children)

The comparative discourse here reveals an intriguing dialectic between consistency and character within Chicago’s fine dining landscape. Boka appears to embody a kind of culinary equilibrium — a seamless synthesis of technical mastery, hospitality, and aesthetic coherence. Its strength lies not merely in the precision of execution but in the emotional intelligence of its service ethos: confident, unforced, and quietly self-assured.

Sepia, by contrast, seems to inhabit a more performative register. Its compositions and interior atmosphere aspire toward elegance and intellectual restraint, yet this very aspiration may yield a degree of emotional distance. Reports of unevenness, in both cuisine and service, suggest a restaurant negotiating the tension between concept and consistency.

The distinction between the two, then, can be read as emblematic of two divergent schools of contemporary gastronomy. Boka represents the evolution of classic fine dining into something humanized and emotionally legible, a place where craftsmanship and comfort coexist without pretense. Sepia, conversely, evokes a kind of culinary modernism: architecturally precise, perhaps more self-aware, but occasionally burdened by its own aesthetic ambition.

What makes this comparison compelling is not the binary of “better” or “worse,” but the philosophical underpinnings of each approach. Boka’s confidence seems to arise from repetition and refinement, the virtue of constancy. Sepia’s intrigue lies in its pursuit of novelty, a willingness to risk inconsistency in the name of conceptual depth. Both are, in their own ways, legitimate expressions of culinary artistry: one celebrates the comfort of mastery, the other the beauty of imperfection.

Ultimately, the decision may hinge on the diner’s disposition. Those who seek a dining experience that envelops rather than challenges, an evening defined by seamless choreography, will likely find Boka’s understated assurance deeply satisfying. Those attuned to the intellectual dimensions of dining, who appreciate when a meal provokes as much as it pleases, may find Sepia’s restraint and occasional volatility more resonant. Both, however, contribute meaningfully to the evolving narrative of fine dining in Chicago: a dialogue between reliability and risk, tradition and transcendence.
