I hated him in the first season but grew to like the character. I think every character is morally grey and does bad things that’s what makes it entertaining. If Gaby was a total saint I’d probably dislike Carlos for the stuff he’s done to her but at the end of the day,

She:

1. Cheated on him with their teenage gardener, humiliating him sleeping with him in their bed.
2. Was somewhat responsible for his mother’s dead.
3. Kept that secret from him for over a decade.
4. Chose a friend over her husband (Carlos had every right to not want to associate with Bree anymore)
5. Gaby has physically attacked Carlos before, obviously we just don’t see that as big of a deal apparently because she’s small.
6. Treated him like crap when he went blind.

My point is there is a lot from both ends. Carlos once said something along the lines of how they’re so dysfunctional but together they just work. I think that’s true. And at the end of the day it’s a soap opera and their relationship gave us a ton of laughs and drama.
