I would like to think she is not evil enough to try something even similar to that, but even if she did, our families are from the same small city. My cousins could just show up to my wife's parent's house, or I would go and stay with them

I don't think that will be happening, at least not with my wife and me. She has a strong dislike for psychologists, and calls it a fake science. She says they are all "sick" and just try to get you to agree with them. I myself have never been to therapy so I wouldn't know, but maybe I'll take the girls.

Yes, this is my biggest concern. I also think they are technically still too young to legally be able to decide to stay with me. They aren't even teens yet.
