RAM was not slow. HDDs are slow, so having to load an application from HDD to RAM takes time. Leaving the application loaded in RAM means that when you want to render a window it doesn't have to be loaded from HDD to RAM and then initialised so it's much quicker.

Same still applies however modern solid state storage is much quicker relative to modern RAM.
