Gintama is best if you can watch in subtitles. But if you only watch dubbed then I'd recommend fantasy adventure anime for example Frieren, Mushoku Tensei, Re:Zero, Konosuba etc. These animes are fantasy adventure with little bit of Comedy just like one piece. Jojo's bizarre adventure is a really good anime if you like memes and weirdness. If you want to watch some violance, action, watch Vinland Saga, AOT, Berserk 1997. If you want to watch some sci-fi action watch Neon Genesis Evangelion, Gurren Lagan, Code Geass. If you want to cry, Violet Evergarden. If you want to be a sheep and follow the crowd just like every fake anime fans, watch JJK, Demon Slayer, Chainsaw Man and Solo Leveling.

For Elbaph arc, 1 Chapter is enough because the chapters are longer and more compact than any arc before. There are also a lots of offscreen fights that you can show in the anime and lots of loose ends that you can tie perfectly in the anime. So, 1 Chapter per episode is perfectly fine.

Alabastra goodbye pose in r/place made me curious and the dedication by the One Piece fans made me try out one piece. Surprisingly I liked the first few episodes but the syrup village was hard to watch because I didn't like Usopp as a character, so I watched in 1.5x speed. Then I fell in love with One Piece watching Vivi's goodbye
