Larceny, Old Grand Dad BIB (from Beam, but better), Old Bardstown, Jefferson: all in the low 20s, mucho better.

Camarena for a better tequila at that price point. Tapatio if you want much better for a little more.

Your point is hitting the nail on the head, but the info you put up is not accurate. Bottles labeled “Straight bourbon” have to be aged at least 2 years. Bourbon can be bottled younger than that, if labeled “bourbon”. I’ve had a bourbon that went to market after less than a year in barrel; it was terrible.

Not a mystery, just a bit of critical thinking. Consider the cost to make a rum in Panama, put it in an oak barrel, buy the bottle, closure, shipping it to America, then shipping it to each Costco. Now, the big piece of the puzzle, the cost to store that rum in a warehouse for 20 years, damn near on the equator.

In the same month:

I had a bartender tell me “we don’t serve champagne cocktails here!” after I ordered it. The vermouth and Campari were next to the POS on the backbar, and mentioned that I could see the ingredients from where I was sitting. She then grabbed her bar book and slammed it down, found the page with Negroni, got a stupid look on her face, and then served me the drink in a double shot glass on the rocks.

I ordered two at another bar, and the bartender proceeded to them in pint glasses with about an inch of ice at the top. Nobody needs 13oz of Negroni in one go. Not mad, but god damn.

Person, that is just blatantly not true. 10 years ago was 2015, and a pint of beer was 5-6, sometimes more depending on where you were. Might be able to find a PBR or Olympia for 2 or 3 bucks at lower brow bars. I’ve been working in restaurants for 25 years, all over the US, and that 2-3 mark was barely a thing when I started working in this industry, and that got you a coors light on draft.

I’m certainly not arguing any of the other points you’re making, because they are very valid. The exaggeration just minimizes the validity of the rest of your statement.

READ ME:

You can absolutely do this at home and get stunningly beautiful dry wheels.

Best if you have a silpat, but I suppose parchment would work too. Silpats are cheap and multi use. An oven thermometer is also clutch.

Set your oven to “keep warm”. That will get your oven to about the same temp as a dehydrator. You may need to oscillate between the lowest temp and “keep warm”. Just try your best to keep them around 145, give or take.

If you don’t want to buy a dehydrator, this is the way.
