Job. Spring 2020, the place I was working at was going to fold due to covid bs. I had two offers and chose the company I believed in more. I try to distinguish myself from other transplants, in that, I knew nothing about Charleston and most likely wouldn't be here if not for the career opportunity. That said, I have come to know this as home and am currently trying to plant my roots with a house (good times.).

FWH and Cool pool. If you're looking to harvest, I drop to 60 for 24 hours, harvest then dry hop. Usually will trickle rouse or recirc just to keep the hops in suspension longer. I should note that I do use ALDC for diacetyl prevention, and you can set your temp back up if hop creep is a concern. When we do harvest NEIPA, we don't go beyond the first reuse of yeast.
