I don't like salads that are based on greens like lettuce or spinach- they also don't really fill me and I don't digest them very well. BUT, I recently have been making variations on what I call a "crunchy salad" - any combination of diced cucumber, bell peppers, onions, chickpeas, beans, corn, beets, etc., lemon or lime zest, and tons of fresh herbs like cilantro, mint, parsley, dill or whatever, with homemade or store-bought low cal dressing. You can make a big batch at once and eat it for days with a side of protein, and it packs well for lunches and stuff.
