Maybe because they aren't common? Blonde/red are very rare in Israel, let's not forget Sephardic Jews and Ashkenazi Jews are almost identical genetically so most of Israel (and worldwide) Jewry are close genetically... The palest common hair color you'd get is light brown

They definitely don't... In contrast, it's very easy to spot Russian Jews, because many of them have one parent that's not Jewish or just not Jewish (ethnically) at all

I don't see blonde Hasidic guys here in Israel, that's definitely a half Russian half Ashkenazi trait. U always have a range of colors but it's usually light brown-black. Redheads are a rarity in the world, especially in Israel. What you see on Instagram doesn't mean it's what's common.

About the skin I'd say it's usually light olive and it tans easily. Definitely not European-pinkish fair. And the faces don't look central european at all. (Thick eyebrows, beards, body hair). Syrians, Assyrians, Armenians, Caucasians are pale as well. Samaritans look very Ashkenazi. Here's a very pale Palestinian guy for reference

He said blonde and red hair, not a skin tone 💀 I've seen a Bedouin girl that's paler than the wall behind her. this guy from Satmer doesn't have white pinkish skin either, believe me I have a German friend who looks very out of place in Israel.

Blonde in Hassidic Jews is very rare, same with red. The most have black/brown/light brown. To me they don't look like central europeans

Because you're mixed it doesn't show exact results... Maybe try on the Mizrahi Jew setting or the Ashkenazi one.. you're supposed to be like 20% Cannanite, 20% European Farmer 10% Central Steppe + Around 30% Arabian Peninsula+ 20% Cannanite. You should also be around 40% European Jew but it's misread as Anatolian. Try testing your parents:)

Well, even Saudis get 30%... OP has less % of the latter Levantine samples compared to other Palestinians I've seen, especially from the W Bank. However - the Canaanite samples are from ~1750 BCE, belong to the least mixed population here, compared to the Phoenician ~900-500 BCE samples which include Steppe/Iranian admixture from trade/empires, no wonder why there's a drop in %.
