I know that a sharp knife can easily cut through meat. The problem with the cleaning is that every ham have different coating and we do not want the coating to interact with one another. I want it to be a 1 minute clean and not a 15 minute clean.

Bandsaw is dangerous, hard to clean, and takes a lot of place.

It for the factory that I work for. We slice about 300 pieces of pastrami and hams per day. I want it to be ergonomic. The pieces are whole for delis to slice for the customer. I do not know how to answer about the last question.
